There is nothing I love more, food wise, than a good potato. I know there are much healther veggies to consume but I can’t help it. I served these with dinner last night and they were to die for.

Individual Scalloped Potatoes - The Noshery (photo via The Pioneer Woman)

8 whole medium potatoes
1 stick Butter
1 cup Shredded Cheddar Cheese
½ cups Scallions, Chopped
12 teaspoons Half-and-half
Salt And Pepper

Pierce potatoes with fork, sprinkle with salt, wrap in damp paper towel and microwave for 15 minutes. Potatoes should be firm. Set aside and let cool till they can be handled, then slice.

Place 1/2 Tbsp pats of butter in each mold of the muffin/cupcake pan, then a slice of potatoes, a pinch of salt and pepper, then cheese and scallions. Repeat layers: potato, salt & pepper, cheese, scallions. (I only did 2 layers, but I suggest going up to 3.) Top each mold with another pat of butter and drizzle each with 1 tsp of half-and-half.

Bake in the oven at 400 degrees for 20 – 25 minutes, until cheese is melted and potatoes are brown.

Reblogging because I fully intend to try making these over the holidays. The only thing I would do differently would be to actually bake the potatoes beforehand, instead of nuking them.

New celeb crush. Jason Segel.

Why just now, you ask? Haven’t you seen How I Met Your Mother? Yes, but “Marshall” actually bugs me on the show. What about Forgetting Sarah Marshall? Loved it, but, ”eh.”

Until last night, when he appeared in my dreams and everything changed. This has happened before… years ago, when everyone was in love with Kirk Cameron from Growing Pains, I liked the little brother, Ben Sevier (Jeremy Miller). The weirdo. Why? Because one night I had a dream I was babysitting with him and I was forever changed. I felt a connection to him. Does this happen to anyone else? I actually feel like I spent real time with Jason last night. We shared a moment. And now I am obsessed.

Yes, I am happily married, so thank God this didn’t happen IRL. But damn. :)

For my grandchildren, I’d like better. I’d really like them to know about hand me down clothes and homemade ice cream and leftover meat loaf sandwiches. I really would. I hope you learn humility by being humiliated, and that you learn honesty by being cheated. I hope you learn to make your own bed and mow the lawn and wash the car. And I really hope nobody gives you a brand new car when you are sixteen. It will be good if at least one time you can see puppies born and your old dog put to sleep.

I hope you get a black eye fighting for something you believe in, I hope you have to share a bedroom with your younger brother. And it’s all right if you have to draw a line down the middle of the room, but when he wants to crawl under the covers with you because he’s scared, I hope you let him. I hope you have to walk uphill to school with your friends and that you live in a town where you can do it safely.

On rainy days when you have to catch a ride, I hope you don’t ask your driver to drop you two blocks away so you won’t be seen riding with someone as uncool as your Mom. Next time I am at Trader Joe’s, I am buying an orchid! I have wanted one forever and my mantle is just begging for a little beauty!! I love how they add height, color, and lots of luxe!! Pics to come… {because, obvs, this is not my beautiful orchid. :) }
